John Chantarasak, a chef with both Thai and British roots, has honed his skills in famous kitchens such as Som Saa and the Michelin-starred Nahm in Bangkok. His culinary journey has been marked by a dedication to authentic Thai flavours, which he now marries with seasonal British produce. An experienced sommelier, Desiree complements John’s culinary vision with a thoughtfully curated wine program. Together, they have transformed AngloThai from a series of successful pop-ups into a permanent dining destination.
The restaurant’s interior, designed with Thai-American designer May Redding, draws inspiration from Thailand’s contemporary design and art deco movements. The space exudes the warmth and comfort of a well-loved home, featuring custom furniture crafted from indigenous Chamchuri wood sourced from Chiang Mai. The lighting and decorative art pieces also come from Thailand. The tableware, made by a Welsh ceramicist, features glazes inspired by traditional Thai celadon. The concept for Bottarga comes from a series of summers spent exploring the Greek islands. These summers led to a deep appreciation for their cuisine and a particular fondness for feta cheese. This passion shows in the restaurant’s offerings, which aim to evoke the warmth and friendliness of Aegean dining. The menu encourages guests to linger, people-watch, dine al fresco, and indulge in desserts as a non-negotiable part of the experience.
Bottarga occupies the former site of Chicama. It retains the structure but introduces new artwork and an improved terrace designed for year-round use. The interior features bare wooden floors and uneven plaster walls, creating a rustic ambience. Eclectic crockery from various antique markets adorns the tables, adding charm to the restaurant. Original artwork and a curated soundtrack by DJ Georgios Kalamotousakis enhance the dining atmosphere.
