Fonda Restaurant in London Review: Santiago Lastra’s New Venue in Mayfair

Santiago Lastra, the famous chef behind the Michelin-starred KOL, is preparing to launch his latest venture, Fonda restaurant in London, in the heart of Mayfair. Scheduled to open in September 2024 on Heddon Street, Fonda aims to bring the rich culinary traditions of Mexico to London with a clever twist.

Fonda will be a more casual offering than KOL. It is inspired by the family-owned ‘fondas’ in Mexico, known for serving hearty, traditional dishes. Lastra’s new restaurant will focus on comfort food that combines Mexican culinary traditions with contemporary techniques and British ingredients. The menu reflects the diversity of Mexican cuisine, offering dishes from various regions of the country.

The restaurant’s interior design, managed by well-known Mexican designer Fernando Laposse in collaboration with London design agency A_nrd, will draw inspiration from rural Mexico. The decor will pay homage to the old haciendas of the Yucatan and the textiles and crafts of Guanajuato. The setting will feature regularly changing art from emerging Mexican artists. It will add a dynamic and cultural touch to the dining experience.

Lastra’s previous success with KOL, which earned a Michelin star and a spot on the World’s 50 Best Restaurants list, sets high expectations for Fonda. The new restaurant aims to continue Lastra’s legacy of redefining Mexican cuisine in the UK, providing an approachable yet sophisticated dining experience that celebrates Mexico’s rich flavours and traditions​.

Fonda’s menu promises a delightful array of dishes that highlight the essence of Mexican street food and home-cooked meals. Some standout items include Chalk Stream Trout Ceviche served with squash agua chile, which brings a fresh, tangy flavour profile. The Confit Scallops are accompanied by a gooseberry, sesame, and burnt habanero salsa. Taste the Adobado Charred Monkfish, paired with potatoes and spiced kelp butter. The Traditional Mole, featuring beef short ribs, is a dish that reflects Lastra’s expertise and deep understanding of Mexican cuisine​.

Additionally, the menu will feature dishes cooked on clay comals. These are traditional griddles used for cooking masa, including tacos, tostadas, and costras of ribeye topped with melted Swaledale cheese on flour tortillas.
