This debut establishment blends Thai culinary traditions with British ingredients, reflecting the couple’s diverse heritage.

John Chantarasak, a chef with both Thai and British roots, has honed his skills in famous kitchens such as Som Saa and the Michelin-starred Nahm in Bangkok. His culinary journey has been marked by a dedication to authentic Thai flavours, which he now marries with seasonal British produce. An experienced sommelier, Desiree complements John’s culinary vision with a thoughtfully curated wine program. Together, they have transformed AngloThai from a series of successful pop-ups into a permanent dining destination.

The restaurant’s interior, designed with Thai-American designer May Redding, draws inspiration from Thailand’s contemporary design and art deco movements. The space exudes the warmth and comfort of a well-loved home, featuring custom furniture crafted from indigenous Chamchuri wood sourced from Chiang Mai. The lighting and decorative art pieces also come from Thailand. The tableware, made by a Welsh ceramicist, features glazes inspired by traditional Thai celadon. Every element within the restaurant is thoughtfully curated to reflect Thai and British aesthetics.

The menu at AngloThai is a harmonious fusion of Thai recipes and British ingredients. Dishes are designed for sharing, encouraging a communal dining experience. Starters include Comice pear with candied beetroot and Suffolk rapeseed, offering a seasonal balance of sweetness and earthiness. Another small plate, the Carlingford oyster with sea buckthorn and fermented chili, pairs fresh oysters with tart sea buckthorn and a hint of heat. Small plates, such as the Brixham crab with Exmoor caviar on a coconut ash cracker, add to the upscale appeal of AngloThai’s menu.

In the main course section, vegetarian and seafood options stand out. The lion’s mane mushroom with sunflower seed satay and puffed quinoa is a delightful vegetarian option. The wok-fired long aubergine with sweet basil and soy-cured yolk is another unique option. For heartier options, the root vegetable terrine with roasted coconut curry and todoli citrus offer complex flavour profiles. Meanwhile, the Ryall Farm Hebridean hogget with Massaman curry and black fig showcases a rich, warm curry.

The sides at AngloThai are also well-considered, with options like pearled naked oats offering a wholesome accompaniment to the main dishes. For dessert, AngloThai’s menu offers options like the crown prince squash with fig leaf and pumpkin seed ice cream. The cacao ganache with sugarcane rum and salted coconut rounds the meal with chocolate and tropical flavours.

Desiree Chantarasak oversees the wine selection, focusing on European producers prioritising craftsmanship and sustainability. The list includes accessible options alongside premium bottles.
