Executive Chef Graham Squire, at the helm since 2019, continues to lead the culinary team focusing on seasonal, ingredient-driven British dishes. The revamped menu highlights include Roast Orkney Scallops served with peas, lemon verbena, and brown butter. The Cornish Monkfish comes with mussels, seaweed, gooseberry, and herbs.
Another favourite is the Rhug Estate Lamb, featuring hot pot pie, lamb fat carrot, pickles, and BBQ gem relish. The Eggs Drumkilbo is a classic dish loved by the late Queen Mother, reimagined with native lobster, boiled eggs, aged caviar, and roasted tomatoes. The Lobster Omelette, Another signature offering, remains a staple on the menu.
The Dining Room also offers whimsical and theatrical touches, such as a beetroot macaron amuse-bouche and showstopping trolleys that serve classic Champagne cocktails and dishes like Beef Wellington and Rum Baba Flambé at the table.
