Sune restaurant in London stands inside the Broadway Market. It is the latest culinary sensation by the duo of sommelier Honey Spencer and partner Charlie Sims, formerly of Noma in Copenhagen. Their combined 35 years of global experience, from Sydney to Mexico and London’s Michelin-starred Lyle’s, coalesce in this new venture, offering a mix of British cuisine with international nuances.
The name ‘Sune’ derives from the Old Norse word for ‘son’. The menu celebrates British culinary heritage, infused with global flavours. The starters, a meal highlight, range from Carlingford oysters with a koji mignonette to grilled flatbread garnished with trout roe and horseradish cream. The mains continue this high standard. Savour dishes like strozzapreti pasta with tangy wild mushrooms. Try Rockefeller toasties filled with a blend of parmesan, bacon, pecorino, and spinach. The grilled pork chop, bathed in a prawn, lemongrass, and miso jus, offers a nod to pan-Asian cuisine.
Honey Spencer’s expertise as a wine director shines through in Sune’s wine selection. The curated list features natural wines, like the Yo El Rey Grenache and Syrah from Stellenbosch, complementing the dishes’ charismatic flavours. Even the brown rice sake, with its Marmite-like divisiveness, adds a unique touch to the dining experience.
The warm, woody interiors of the place, illuminated by candlelight, create a cosy and inviting atmosphere. Large windows offer views of the Regent’s Canal. Plans for a balcony promise summer sunsets over the water. Sune is a young addition to the London dining scene, poised to become a staple for food enthusiasts and a beacon of culinary innovation in the city.
