And what do we get from that? An everchanging menu, ever-charming. Each month you may find something new as the seasons change, and fresh ingredients come to the peak of their flavor. Taste dishes like smoked venison with licorice sauce and beetroots or an entire plaice fish served on the bone with a fermented pea, butter, and herbs sauce. Maybe try something as simple as a grass-fed steak with brown butter and smoked pepper, sensing the flavor complexity of each ingredient as they balance each other out.
Here, although meat and fish may come as the central aspect of a dish, there are always fresh seasonal vegetables, fruits, and herbs on the side that shine with caramelized and smoked flavors. The cobalt blue walls and ceiling contrast with the orange lighting from big circular hay lamps hanging above the bar.
