Ingredients as far as from Japan the team source the highest-grade Hyōgo Prefecture Kobe and Kagoshima wagyu beef; Sanpuku, the finest nori from Japan’s Ariake Sea; Koshihikari rice and aged soy sauce.
Wherever possible the chef and kitchen team use local and seasonal products throughout the year to create perfectly balanced tasting menus, which have consistently been recognized as one of the best Japanese experiences in London by the leading press.
Rai offers a tasting menu that will excite your palate. Dishes include, homemade tofu, Amaebi prawns, hand-picked Maldon rock oysters with 5-year aged soya sauce and fresh Japenese wasabi, hand-dived Orkney scallops, 48hrs marinated Chilean seabass, Wagyu chocoloate with rosemary, pistachio and thyme and to end off Petit fours with organic chocolate and homemade rice wine.
