On Shoreditch High Street, Waltz Bar in London is one of the city’s most exciting new cocktail venues, blending Japanese bartending precision with a relaxed, low-key atmosphere. Opened by Gento Torigata, an alumnus of the award-winning Kwãnt, Waltz is a personal project that celebrates hospitality and craftsmanship at its finest.
Stepping inside, you’re immediately struck by the intimacy of the space. With just 28 seats, Waltz feels like you’ve been invited into a friend’s living room—if your friend happened to be one of London’s best bartenders. The design leans heavily on dark woods, mood lighting, and soft jazz on the speakers. There’s no big signage outside, just a subtle brass plaque by the door—perfect for those who love a little mystery with their martini.
The bar counter itself is the heart of Waltz. Gento and his team work with deliberate, almost meditative movements, serving each drink with both precision and charm. Watching them work feels like part of the experience. The space is long and narrow, with warm amber tones and a few small tables along the wall, making it ideal for dates or catching up with friends away from the usual Shoreditch bustle.
What makes Waltz stand out is its rare mix of Shoreditch cool and Tokyo-style hospitality. There’s no pretension, no fuss—just meticulously made drinks, good music, and bartenders who genuinely love their craft. It’s the kind of place you’ll want to keep to yourself, but won’t be able to stop recommending.

The cocktail menu is short, but every drink feels like it’s been fine-tuned for weeks. The “Ginza Martini” is already a house favourite— ice-cold and crystal clear with a hint of umami thanks to kombu-infused gin. Another standout is the “Fallen Leaves,” a balanced blend of Japanese whisky, oloroso sherry, and bitters that delivers autumnal richness in every sip. If you want something refreshing, try the “Herb Garden,” featuring gin, shiso, and lemon for a bright, aromatic lift.
There’s also a small but thoughtful snack menu that leans into Japanese bar food classics. Expect dishes like edamame, Japanese pickles, and karaage fried chicken. The food here doesn’t replace dinner, but it’s perfectly pitched for pairing with a second (or third) drink.
