KOYN is a contemporary Japanese restaurant in London that vouches for traditional cuisine and cooking techniques from the regions around Mount Fuji. The restaurant divides itself into two spheres with a simple and harmonious design. Izakaya-inspired dishes and decor dance with the nature-inspired roots of the restaurant. At KOYN, modernity and tradition come together to create a unique proposition.
First, you’ll find MIDORI, inspired by Japanese Zen Gardens and the volcanic soils around Mount Fuji. Blended, these two give out an air of serenity and peace of mind, expressed on the restaurant’s green leather seats on top of a tatami mat-inspired flooring. A marble sushi counter prepares complex sushi rolls, nigiri, and fresh-fish sashimi in the middle.
At the following sphere, MAGMA, expect to encounter an underground space that mirrors the insides of Mount Fuji. Terracotta tiled walls and orange leather seating highlight the warm and immersive environment. Here, find the famous Japanese binchotan-charcoal-fuelled-robata grill. Taste meat, fish, vegetables, and seafood prepared over the open fire. Eat while watching the smokey flavors take form inside the open-counter kitchen.
KOYN’s menu is crafted based on a sharing concept. Inspired by izakaya cuisine, the entire menu cherishes traditional and authentic Japanese cuisine. Executive Chef Rhys Cattermoul creates signature dishes that highlight the best ingredients of each season. A selection of fine Japanese whiskeys accompanies your meal, and a carefully curated wine list complements the experience.
Start with Kohlrabi apple tartare with avocado and tonburi. Taste the robata-grilled Hojicha smoked lamb cutlets with kuromame miso and pickled mushroom. Order sushi rolls and experience Japanese smoked wagyu with asparagus, kanpyo, and black truffle.
Savor the Japanese Penicillin cocktail, a sweet, peppery, and smokey mixture of Hibiki harmony whisky, honey, yuzu, and lapsang tea.
